Spring Dinner Party Menu

Whenever the weather is warmer I crave fresher flavors.

Fresh salads with beets and goat cheese, risotto with peas and asparagus and salmon on the grill! Are you starving yet, I am so hungry writing this haha! As we enter into the season of entertaining I thought I would help make your life a little simpler with weekly menus for dinner parties from some of my favorite food blogs. This week is all things spring with these fresh flavors!

To Start

Beet and Goat Cheese Arugula Salad

Ingredients

Directions

  1. Line a baking sheet with foil. Preheat the oven to 450 degrees F.
  2. Whisk the vinegar, shallots, and honey in a medium bowl to blend. Gradually whisk in the oil. Season the vinaigrette, to taste, with salt and pepper. Toss the beets in a small bowl with enough dressing to coat. Place the beets on the prepared baking sheet and roast until the beets are slightly caramelized, stirring occasionally, about 12 minutes. Set aside and cool.
  3. Toss the arugula, walnuts, and cranberries in a large bowl with enough vinaigrette to coat. Season the salad, to taste, with salt and pepper. Mound the salad atop 4 plates. Arrange the beets around the salad. Sprinkle with the avocado and goat cheese, and serve.

Main

Asparagus and Lemon Risotto

Ingredients

  • 6 cups vegetable stock, preferably homemade
  • 1/4 cup olive oil
  • 1 small onion, finely chopped
  • 1 cup Arborio or Carnaroli rice
  • 1/2 cup dry white wine
  • 1 bunch asparagus, trimmed, stalks cut into 2-inch lengths
  • 1 cup thawed frozen peas
  • 1 teaspoon grated lemon zest, plus more for garnish
  • 2 tablespoons fresh lemon juice
  • 1 cup chopped fresh flat-leaf parsley leaves
  • 1/2 cup finely grated Parmigiano-Reggiano, plus more for serving
  • Coarse salt and freshly ground pepper

Directions

  1. Bring stock to a simmer in a medium saucepan.

  2. Heat 2 tablespoons oil over medium heat in another saucepan. Cook onion, stirring frequently, until soft, 6 to 7 minutes. Add rice, cook, stirring, until edges are translucent, 2 to 3 minutes. Add wine; cook, stirring, just until evaporated.

  3. Add 1/2 cup hot stock; cook, stirring, until almost absorbed. Continue adding 1/2 cup stock in this manner until liquid is creamy and rice is al dente, about 20 minutes total (you may not need to add all the stock). Add asparagus with the last addition of stock, and the peas about 1 minute before risotto is done.

  4. Remove from heat; stir in lemon zest and juice, parsley, cheese, and remaining 2 tablespoons oil. Season with salt and pepper. Serve immediately with additional cheese and lemon zest.

Lemon Grilled Salmon

Ingredients

  • 2 teaspoons snipped fresh dill or 3/4 teaspoon dill weed
  • 1/2 teaspoon lemon-pepper seasoning
  • 1/2 teaspoon salt, optional
  • 1/4 teaspoon garlic powder
  • 1 salmon fillet (1-1/2 pounds)
  • 1/4 cup packed brown sugar
  • 3 tablespoons chicken broth
  • 3 tablespoons canola oil
  • 3 tablespoons reduced-sodium soy sauce
  • 3 tablespoons finely chopped green onions
  • 1 small lemon, thinly sliced
  • 2 onion slices, separated into rings

Directions

Sprinkle dill, lemon-pepper, salt if desired and garlic powder over salmon. In a large resealable plastic bag, combine the brown sugar, broth, oil, soy sauce and green onions; add salmon. Seal bag and turn to coat. Cover and refrigerate for 1 hour, turning once.Drain and discard marinade. Grill salmon skin side down, over medium heat; arrange lemon and onion slices over the top. Cover and cook for 15-20 minutes or until fish flakes easily with a fork. Yield: 6 servings.

Dessert

Strawberry Shortcake

Ingredients

Whipped Cream:

Directions

  1. Mix strawberries with 3 tablespoons sugar and refrigerate while juices develop, at least 30 minutes.
  2. Preheat the oven to 400 degrees F.
  3. Sift together the flour, baking powder, baking soda, remaining 2 tablespoons sugar, and salt in a medium bowl. Add heavy cream and mix until just combined. Place mixture in an ungreased 8-inch square pan and bake until golden, 18 to 20 minutes.
  4. Remove shortcake from pan and place on a rack to cool slightly. Cut into 6 pieces and split each piece in half horizontally.
  5. Spoon some of the strawberries with their juice onto each shortcake bottom. Top with a generous dollop of whipped cream and then the shortcake top. Spoon more strawberries over the top and serve.

Whipped Cream:

Using a mixer, beat the heavy cream, sugar, vanilla, and lemon zest until soft peaks form, about 1 1/2 to 2 minutes.
