
This is by far one of my favorite meals to make in the fall. The flavors are so wonderful and compliment each other so well. AND all the ingredients are inexpensive to buy! Serve at a dinner party on a chilly night for the perfect fall meal, or even at at Fall Harvest party (on the blog Wednesday!).

INGREIDENTS
- chicken sausage (I love the spicy kind!)
- stone ground mustard
For the salad:
- Kale
- 1 green apple – sliced
- sliced walnuts
- dried cranberries
- olive oil
- 1 tbsp honey
- 1 tbsp white vinegar (balsamic would work too)
- 2 tsp dijon mustard
DIRECTIONS
Cook the sausages according to the directions on the packaging (I usually sautee them in a pan until they are brown on each side). In the same pan (remove the sausages), add the kale and olive oil – make sure to remove the kale from the stems first. Sautee in the olive oil until the kale is soft. Remove the kale and put in a bowl, add a handful of cranberries, sliced almonds and sliced apples. In a small bowl mix the dijon mustard, honey and white vinegar. Add to the kale mixture. Serve a cup of the kale salad with two sausages and stone ground mustard on the side!
