Hot Coco

My favorite holiday tradition is hot coco.

The minute December comes or snow is on the ground I head out for a hot coco. I never got into the PSL craze, but when it comes to hot chocolate I am one of those crazy PSL people. Nothing beats hot chocolate after a ski day or sitting by the fire with the winter snow fall enjoying one. Simply picture perfect. I am unable to enjoy regular milk so my go to is almond milk. Honestly it is so tasty! You notice a little difference but it is still very enjoyable. This recipe is for an almond milk hot chocolate and I promise you won’t be disappointed!

Ingredients

  • 4 cups unsweetened almond milk
  • 2 cinnamon sticks, split lengthwise
  • 1/4 cup unsweetened natural cocoa powder
  • 2 ounces dark chocolate (preferably at least 70 percent cacao), finely chopped
  • 1/4 cup granulated sugar
  • 1/4 teaspoon coarse salt

Directions

  1. Bring milk and cinnamon sticks to a boil over medium heat. Reduce heat, and simmer gently for 10 minutes. Remove cinnamon sticks, rinse, and reserve.

  2. Whisk in cocoa, chocolate, sugar, and salt, whisking vigorously until mixture is foamy, 1 to 2 minutes. Divide among mugs. Garnish with cinnamon sticks or marshmallows.
