Long i Pie

Your mind will be blown with this pie recipe.

When it comes to the holidays dessert is always at the top of my list. My dad is such a pie lover and every Thanksgiving we usually end up with four Costco sized pies for the five of us. My dad, J and I are always the only ones that actually eat the pie and we end up with a months of leftovers! No complaints there.

 I came across a local Denver pie company, Long I Pie, via Instagram and fell in love with their delectable desserts. The Long I Pie Shop bakes their pies in cast iron skillets which makes the crust extra buttery, flaky, and delicious.  Need I say more? Using both family recipes like Grandma’s Spiced Apple Cranberry Pie and experimental recipes that they have developed in their own kitchen such as The Honey Flower. Let me tell you, their pies are to die for.

Long I Pie owner Shauna Lott and her partner Annie Herzig created the most adorable pie recipe book, “Not Your Granny’s Pie”. The recipes are all unique and are definitely worth trying this holiday season! My favorite? The Drunken Nut! Try the recipe below!

Ingredients

  • 2 cups pecans
  • 2 tablespoons unsalted butter (melted)
  • 3 eggs
  • 3/4 cup brown sugar
  • 1 teaspoon vanilla
  • 2/3 cup honey
  • 3/4 cup semisweet chocolate chips
  • 1/2 teaspoon salt
  • 3 tablespoons favorite bourbon

Directions

Prepare your pie crust. Preheat oven to 400º. Begin by beating the eggs in a mixing bowl. Add melted butter, bourbon (take a swig while you are at it!), salt, vanilla, brown sugar, and honey. Mix with a wooden spoon. Fold into Chocolate chips and pecans. Pour mixture into prepared pie crust. Bake in a 9-inch cast iron skillet for 40 minutes (glass or tin pie pan, 50 minutes). Cool on counter for 1 hour.
